Saffron is a plant derived from the dried stigma of the flower of the saffron crocus (Crocus sativus), a species of crocus in the family Iradaceae. The usable parts of the plant which are available as saffron commercially are distal ends of plant carpel and stigmas.Historical manuscripts illustrate this fact the Iranian nation have favored to gold and saffron, anciently. They  usa of both gold and saffron in their celebrations and ceremonies and also showered saffron over endeared  people legs. Saffron has been used as a natural and stable dye in the silk carpets woven by Iranian prestigious craftsmen. In the other hand it has been used as a valuable and hardy ink at some ancient manuscripts and calligraphies. In the same view, based on an old belief about good omen of saffron, some kings have ordered to write their commands, errands etc with saffron . Iran and Spain have the first and second ranking in saffron production field, respectively. Saffron cultivation enjoys from a one thousand-year antiquity. It is grown in dried and low-rained regions of Iran where have cold winters and hot summers. Since it is cultivated in drought soils, it is known and red gold or desert gold.

Presently, general classification of saffron is as following :

The moost consumers of saffron are Indians and Arabs. In order to prepare northern Italy and southern Swiss special rice called Rissotto, saffron is consumed enormously.There is famous food called Paella in Spain wich cooked by saffron mainly. Saffron cakes are cooked in England and Germany.

Saffron must keep awayfrom light and mosture.

Because of it s very high price, cheats are inevitable, sometimes. The most impotant cheating is using of hued flowers which are similar to saffron and can produce a yellow color in foods. Oils and candies and honey spray are added to in order to increase it weigh, usually.
